EASY PEACH FRIED PIES
FOR THE FILLING:
3 tbsp. cornstarch
3/4 cup sugar
3/4 cup water
pinch salt
1/4 tsp. almond flavoring (optional)
3 fresh peaches, peeled and diced fine (about 2 cups)
FOR THE PASTRY:
2 cans refrigerated biscuit dough
Vegetable cooking oil
Mix cornstarch, sugar, salt and water in a small saucepan until thoroughly dissolved. Cook over low heat, stirring constantly until thick and clear.
Add diced peaches and flavoring and set aside while preparing pastry.
On lightly floured board roll out each biscuit until very thin. Set aside and let rise approximately 10 minutes.
After dough has risen, roll each biscuit very thin again.
Spread filling of thickened fresh peaches over half of each biscuit. Crimp edges together with a fork.
Heat oil in an electric skillet or on top of range to 360 degrees F. Place pies in hot oil and fry to desired brownness. Turn only once. Drain on paper towel. Serve warm.
Makes approximately 20 pies
