FOUR-IN-ONE COOKIES
1 cup vegetable shortening
1 cup sugar
1 cup brown sugar, firmly packed
2 eggs
1/2 tsp vanilla
1 1/4 cups sifted all-purpose flour
1 tsp soda
1/2 tsp salt
3 cups Quaker Oats, uncooked (quick or old-fashioned)*
Preheat oven to 350 degrees F. Grease cookie sheets.
Beat shortening, sugars, eggs, and vanilla together until creamy.
Sift together flour, soda, and salt. Add to creamed mixture; blend well. Stir in oats. Shape to form 1-inch balls. Place on greased cookie sheets, about 2 inches apart.
Bake in preheated moderate oven (350 F) 12 to 15 minutes. Cool about 2 minutes, then remove cookies from cookie sheets.
*For variety, add: 1 cup raisins, 1 cup salted peanuts, 6 oz. (1 cup) semi-sweet chocolate pieces, or 1 cup flaked or shredded coconut with the oats.
