Recipe(tried): Fresh Ham Baked with Garlic and Sage

Main Dishes - Pork, Ham
Score the skin through to the fat in a diamond pattern.
Rub the out side (skin) with a mixture of:

6 large cloves garlic
2 t salt
2 T onion powder
2 T finely minced dried rosemary (4 T if fresh)
2 t coarsely cracked black pepper
1 T rubbed sage
Crush the garlic with the salt in a mortar and pestle. When the garlic is quite mashed, mix in the other spices.

Make sure you rub the spice mixture into the cuts in the skin quite well.

Roast in a pre-heated 450 degree oven for 45 minutes then reduce heat to 350 degrees and cook till a meat themometer reads between 155 and 160 degrees. (if you are paranoid you can cook till the thermometer reads 160.) Remove from the oven, place on a large platter and cover with some aluminum foil and then cover the aluminum foil with a clean bath towel(folded in half) and let the roast rest for at least 30 minutes, while you mash potatoes and make gravy. Slice and serve immediately.
