Fresh Herb and Chive Biscuits (using tofu)

Makes 24 small biscuits
8 ounce firm silken tofu
1/3 cup apple juice
1 tablespoon lemon juice
1 cup whole wheat flour
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt, optional
2 tablespoons basil, chopped or 1 tablespoon basil, dried
2 tablespoons chives, chopped or
1 tablespoon chives, dried
Preheat oven to 450F and oil cookie sheets.
Blend tofu till smooth. Blend in apple juice and lemon juice. Transfer to a medium sized mixing bowl and set aside.
Sift together the next 5 ingredients and fold into the tofu mixture. Stir in basil and chives.
Turn dough out onto a lightly floured board and form into a ball. Roll dough out to 1/2-inch thickness and cut with a cookie cutter.
Bake for 12 minutes and serve immediately.
