Tofu Vegetable Plate with Mandarin Oranges (microwave)

Yield: 4 servings
11 oz can Mandarin oranges, drain
40 Snow peas
2 Tbsp low-sodium soy sauce
1 tsp sesame oil
1/2 tsp minced garlic
1 tsp minced ginger
10 1/2 oz extra-firm tofu
4 oz fresh mushrooms
1/2 green bell pepper
1/2 red bell pepper
1 cup fresh bean sprouts
2 green onions, thin sliced
Set aside 20 orange sections for garnish. Place snow peas in a 2 cup glass measure, cover with lid or vented plastic wrap. Microwave on high 1 1/2 to 2 minutes. Set aside for garnish.
Place soy sauce, sesame oil, garlic and ginger in 2 quart casserole.
Cut tofu into 3/4 inch cubes: stir into mixture in casserole. Add mushrooms, green and red bell peppers, bean sprouts, green onions, and remaining orange sections.
Cover with lid or vented plastic wrap. Microwave on high 3 to 4 minutes. Toss to combine ingredients.
Using 10 snow peas on each of four plates, arrange five groups of two pods forming a "V" around outer edge of each plate. Place a Mandarin orange section at the base of each "V". Divide tofu veggie mixture among plates, placing in center.
