Recipe: Grasshopper Parfaits with Variations

GRASSHOPPER PARFAITS
Recipe By : Carnation Milk Products
Yield: 8 servings

1/2 cup  Heavy cream
1 tbsp Granulated sugar
1 pkg Cream cheese -- softened
1 1/4 cups  Sweetened condensed milk --14 oz Can
3 tbsp Lemon juice
3 tbsp Green creme de menthe Liqueur
2 tbsp White creme de cacao Liqueur
12 Cream filled chocolate Sandwich cookies - coarsely Chopped

In small mixer bowl, whip cream until soft. Add sugar; beat until stiff. In large mixer bowl, beat cream cheese until fluffy; gradually beat in sweetened condensed milk. STIR in lemon juice, and liqueurs. Fold in whipped cream; chill 20 minutes. Do not stir. In parfait glasses, layer 1 tablespoon cookies and 1/4 cup filling. Repeat layers. Top with remaining cookies. Chill 4 hours.

Variations: 

Coffee: substitute coffee flavored liqueur for cr me de menthe.

Brandy Alexander: substitute 1/3 brandy for creme de menthe.

Orange: Omit creme de cacao and substitute 1/4 cup orange liqueur for creme de menthe.
