Recipe(tried): Green Salsa for Dana

The basic rule of thumb I was taught by a New Mexican chef was to use equal parts of green chile (something hot), white onion, and red tomato (something sweet and acidy). You then add garlic, salt, and fresh cilantro to taste. For your green salsa, I would use equal parts of the onion and green tomato and add jalapenos, lime juice, garlic, salt, and cilantro to taste. I think you need the lime juice to add the acid. For more variations on salsa, you can substitute citrus fruits for the tomatoes.

If this doesn't taste right, the salsa probably contains tomatillos. Tomatillos look like small green tomatoes. You can cook fresh ones or use canned ones and substitute for the tomatoes in the salsa.
