Recipe: Hamburger and Corn Casserole - Welcome to a great site, Dell, here's a casserole...
Main Dishes - Casseroles I have not made this, but it sounds good. I will also find my sandwich recipe using chicken gumbo soup and hamburger, it's great!
HAMBURGER AND CORN CASSEROLE
1 lb hamburger
3/4 cup chopped onion
2 sliced green peppers
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 beaten eggs
2 cup frozen corn kernals, defrosted and drained
1-2 sliced tomatoes
1/2 cup dry bread crumbs
Preheat oven to 375 degrees F. Saute onions and peppers, add hamburger and continue cooking until meat is lightly browned. Remove from heat and stir in eggs. Place 1 cup of the corn in the bottom of a casserole dish that has been sprayed with nonsitck cooking spray. Top with half the meat mixture and a layer of sliced tomatoes. Repeat layers, then top with dry bread crumbs, dot with butter or spray lightly with butter-flavored cooking spray. Bake at 375 degrees F. for 35 minutes Serves 6.
