HOT FRANKFURTER AND POTATO SALAD CASSEROLE
4 franks, simmered, cooled and sliced
4 cups thinly sliced boiled potatoes
1/3 cup salad oil
3 tablespoons vinegar
1 1/2 cups canned or cooked string beans, drained
1/4 cup thinly sliced onion
Drain green beans; place in bottom of casserole. Mix oil, vinegar and potatoes. Alternate layers of potatoes, onions and franks in a greased 1 1/2 quart casserole. Season to taste.
Cover and bake at 350 degrees F for 30 minutes.
VARIATION:
Adjust oil and vinegar to taste. I use 2 1/2 cups of potatoes, 3 tablespoons oil and less vinegar to taste. I also don't bother to layer. Just mix together. But do season the potatoes first.
