Recipe(tried): Herb-Grilled Salmon with Mango Salsa

Hello Everyone!

Today after breakfast, DH and I went and checked out some "underneath cabinet lighting" in some model homes. I have decided that to minimize heat, I will be getting fluorescent lighting instead of the halogen ones underneath the cabinets. See now, this is what I mean about all those itty bitty details. They can sure drive you crazy!

I will post all the specs on Monday as I am hurrying up to start dinner as soon as I leave the PC. I am going to make Cream of Broccoli Soup, serve it with a small Caesar Salad and Banana Bread. (I found a bag of about 30 bananas at Albertson's for 99cents!) Those recipes are for tomorrow.

Yesterday we enjoyed a delicious Herb Grilled Salmon that had a Mango Salsa. It was sooo easy to prepare...I served it alongside Rice Pilaf and Broccoli Spears perfumed with lemon and garlic. The Mango Salsa came about because way back in June, Publix had a terrific sale on Tommy Atkins mangoes. So, I loaded up on them and did some canning!! Anyway, the jalopeno adds just the right amount of warmth and it contrasts really nice with the tropical fruits. Here is the recipe for the salmon! Enjoy!!

Herb Grilled Salmon with Mango Salsa
serves 4

4 thick cut salmon fillets
1/4 c. fresh cilantro
1/4 c. fresh mint
1 small garlic clove, mashed really good
squeeze of fresh lemon
1 t. vegetable oil mixed with a shake of red pepper flakes
1/2 t. salt
1/4 t. black pepper
Cooking spray and Mango Salsa
Rice Pilaf

Place all ingredients in a baggy and marinate for 20 minutes. Remove salmon from bag and put on prepared grill coated with cooking spray.

Cook about 6 minutes on each side or until done. Serve with the Mango Salsa.

Mango Salsa

1 c. cubed mango
1 c. sliced banana
1/4 c. fresh mint
2 T. fresh orange juice
1 t. grated lime juice
1 T. fresh lime juice
1 small can 8 oz. drained pineapple chunks
1 small can jalopeno peppers, drained

Combine all the ingredients in a medium bowl, stir well, cover and refrigerate about 6 hours. (Do it in the morning)
