Recipe(tried): Hot Pickled Veggies or (Rajas)

Preserving - Pickles, Relishes
My grandmother makes something like this often and she calls them (rajas) which means strips.

She juliennes carrots, jalapenos or serranos, whole peeled garlic cloves just for flavor and cuts up some onions in thick slices. She fries them in a little of oil about 3 Tbsp. in small batches seasoned with salt to taste for about 3 minutes in medium heat.

She then puts them in a jar with 3/4 cider vinegar and 1/4 water. Along with some bay leaves, dried ginger and whole peppercorns. Don't use the juice from canned pickled jalapenos it's just too irritating for your stomach.

Let the veggies rest (refrigerated) for about a week before eating. I have made these often and my family loves them. Hope this helps and that you enjoy them.
