Hunt's Sweet Tamale Pie
Servings: 6
1 pound lean ground beef
1 each: medium onion and green bell pepper, chopped
2 cloves garlic, crushed or 1/2 teaspoon garlic powder
1 cup whole kernel corn
1 can (4 oz.) diced green chilies, divided
1 can (14.5 oz) Hunt's Diced Tomatoes in Juice, drained, reserve 1/4 cup tomatoes for cornbread topping
1/2 teaspoon each: salt and ground black pepper
1 box (8.25 oz.) cornbread mix
1 egg
1/3 cup milk
1 cup shredded Cheddar cheese
Pam No Stick Cooking Spray
Preheat oven to 400 F.
Cook ground beef, onion, bell pepper and garlic in a large skillet over medium-high heat for 5 to 7 minutes or until meat is no longer pink; drain.
Stir in corn, half of the green chilies, tomatoes, salt and pepper. Cook over medium heat f
Combine cornbread mix with egg and milk in a medium bowl; mix well. Add remaining green chilies, reserved tomatoes and cheese; stir to combine.
Pour meat mixture into a 9-inch glass pie plate sprayed with cooking spray. Spread cornbread mixture over the top.
Bake for 20-30 minutes or until wooden pick inserted in the cornbread comes out clean.
