Recipe(tried): Inside Out Cheeseburgers

Last night I took out a pound of ground sirloin to defrost and wondered "what in the world am I gonna do with this now"? I didn't want to make the usual meat loaf with trimmings or meatballs...then I remembered a few months back I had made these delicious inside out burgers with melted cheese on top. Oh, they were superb and quite delicious. I think it's a wonderful way to get veggies in you in a tasty way. So I will be making these tonight and serving a salad too.
Of course, I won't be serving them on a bun it because of our diet. But if you wish to serve it with a bun, by all means indulge yourself for a lovely cheeseburger. As I remember, this easy meal took under 1 hour to prepare. The leftover one I will keep for lunch tomorrow.

Inside Out Cheeseburgers
From: The 30-Minute Kosher Cook by Judy Zeidler; William Morrow & Co.
Makes: 3 servings
1 lb. ground sirloin
1 egg
salt and pepper to taste
1 tsp. Italian seasonings
2 Tbsp. olive oil
1/2 red or green bell pepper, chopped
1/2 medium onion, chopped
2 Tbsp. sun-dried tomatoes strips in oil (found in large bottle at Costco)
2 crushed garlic cloves
mozzarella or cheddar cheese (for tops)
In a large bowl mix beef, egg, salt and pepper and Italian seasonings. Make 6 flat patties as you will use two to make 1 burger with the filling inside.
In a skillet, heat the oil and saute the chopped veggies except the garlic. When the veggies are limp and onions are golden, throw in the garlic and cook for 1 more minute. Cool veggies slightly and mound 1 1/2 T. on a patty and top with another patty, seal edges and make as round as possible. Fry them in the same skillet with a little bit of olive oil if needed. Fry on one side for 5 minutes, flip and cook for another 5 minutes. When almost done, top with mozzarella or cheddar slices. Delicious!!
