Japanese Restaurant-Style Sesame Ginger Dressing
alt.food.sushi/Jacinto D. Maquera (1997)
5 parts salad oil
3 parts soy sauce
2 parts vinegar
1 part sesame oil
black pepper to taste
roasted and ground sesame seeds according to your best judgment
grated fresh ginger, to taste
The quality of your ingredients, esp soy sauce and sesame oil, are critical to the final outcome. Yamasa soy sauce is good, and Kadoya sesame oil is also acceptable.
