Lemon Sugar Cookies

Makes 6 to 7 dozen cookies
1 cup shortening
3/4 cup sugar
1 egg
1 tsp lemon extract
2 1/4 cup flour
1/4 tsp salt
1/2 tsp baking powder
With mixer at high speed, cream shortening until soft. Add the sugar gradually, continuing to cream until light and fluffy. Add the egg and the lemon extract; beat well.
Sift flour, salt, and baking powder together. Add to egg-sugar mixture by thirds, beating well after each addition.
Shape dough into 2 rolls. Wrap in plastic wrap or aluminum foil. Refrigerate for 1 hour.
Cut dough into thin-to-med slices and place on an ungreased cookie sheet. Bake for 7 to 8 minutes at 400 degrees, or just until they start to turn golden around the edges. Do not overbake.
