SUPREME SLICED POTATOES
Serves 8
6 cups thinly sliced potatoes
2 tb margarine
2 tb all purpose flour
2 cups milk
1 tsp salt
pinch of ground pepper
1/4 cup sliced green onions
2 cups shredded sharp cheddar cheese
1 1/2 cups bread cubes
1/4 cup margarine
1/4 cup parmesan or romano cheese, grated
Arrange the potato slices overlapping in a Lasagna mold. Prepare a White Sauce with the margarine, flour, milk and seasonings. Add the green onions and the Cheddar cheese, move until the cheese melts. Add the white sauce to the mold, covering with the sauce the potatoes. Cover with aluminum foil; bake at 350 F for 1 hour. Uncover the mold, cover with the bread cubes (which were previously mixed with the margarine and Parmesan cheese). Continue baking for 30 minutes or until the potatoes are tender and the crust is lightly browned.
