KIELBASA WITH SKILLET-STEAMED CABBAGE
2 oz bacon, diced
5 cups coarsely shredded cabbage (1 lb)
1 1/2 cups coarsely chopped golden Delicious apple (8 oz)
1/2 cup chopped onion
1 tsp caraway seed
1 tsp salt
1/4 tsp pepper
1 cup beer*
6 cups water
1 lb kielbasa
Place bacon in an unheated 3-4-quart saucepot and turn heat to moderately high. Cook about 4 minutes, stirring occasionally, until crisp. Pour off fat.
Add cabbage, apple, onion, caraway seeds, salt and pepper to pot. Pour beer over cabbage and toss to mix. Cover, reduce heat to low and cook 30 minutes, stirring once or twice. Cabbage will be wilted but still have color.
Meanwhile, boil water in a 3-quart saucepan. Add kielbasa and cook 5 minutes, until heated through. Drain kielbasa and cut into 4 pieces.
With a slotted spoon transfer cabbage to a medium-sized serving dish. Arrange kielbasa on top.
*Flat or fresh beer may be used. Alcohol evaporates during cooking.
