Side Dishes - AssortedBACON AND CHEESE CAULIFLOWER
1 bag frozen cauliflower
salt and pepper
1/4 cup finely chopped onion
1/4 cup butter
8 ounces shredded cheddar cheese
4 ounces heavy cream
crumbled cooked bacon
Preheat oven to 350 degrees F. Spray a large casserole dish with cooking spray.
Run cool water over frozen cauliflower in colander to separate pieces. Layer 1/2 of the cauliflower on bottom of prepared dish. Season with salt and pepper, then layer with 1/2 onions and thinly sliced pats of butter. Add 1/2 cheese. Repeat layers. Pour cream over top.
Bake 45 minutes at 350 degrees.
Servings: 4
Per serving: Carbohydrates: 6 carbs, 3 fiber; 3 net carbs, 456 Calories, 41 fat, 17 protein.
BAKED BROCCOLI AND CHEESE
Servings: 6
1 (10 3/4-oz) can cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
1/4 cup onions, minced
1 cup broccoli, chopped
1 cup shredded sharp cheddar cheese
1 (2-oz) jar pimiento, chopped
1/4 teaspoon salt, to taste
1/4 teaspoon pepper, to taste
1/4 teaspoon paprika
Preheat oven to 350 degrees F. Butter a 13x9x2-inch baking dish.
In a medium sized mixing bowl, whisk together condensed soup, mayonnaise, beaten egg, and, if desired, chopped onion.
Place broccoli in a large mixing bowl. Pour soup-mayonnaise mixture on top of broccoli and mix well. Add cheese and pimento, mix well.
Pour mixture into prepared baking dish and smooth top of casserole using a spatula. Sprinkle lightly with paprika plus salt & pepper if desired.
Bake at 350 degrees F for 45 minutes to 1 hour. Serve hot.
BLUE CHEESE MUSHROOMS
Serves/Makes: 12
1 pound medium fresh mushrooms
1/4 cup sliced green onions
2 tablespoons butter
1 package (4 oz. size) crumbled blue cheese
1 package (3 oz. size) cream cheese, softened
Remove stems from mushrooms, chop stems. Cook and stir stems and onions in butter until tender.
Add blue cheese and cream cheese; mix well. Spoon evenly into mushroom caps. Place on rack of broiler pan.
Broil 2 to 3minutes or until golden brown. Serve hot.
SPINACH AND CHEESE CRUSTLESS QUICHE
2 teaspoons olive oil
1 medium yellow onion, finely chopped
1 (10-ounce) package frozen chopped spinach, thawed and drained
1 1/2 cups shredded cheddar cheese
6 large egg whites plus 1 large egg
1/3 cup cottage cheese
1/4 teaspoon ground cayenne red pepper
1/8 teaspoon salt
1/8 teaspoon ground nutmeg
Add oil to skillet over medium-high heat. Saute onion in oil for five minutes.
Add spinach and cook for three more minutes. Remove from heat and set aside.
Preheat oven to 375 degrees F. Lightly brush a 9-inch pie pan with olive oil.
Add cheese to pan and top with spinach and onion mix.
In a bowl, whisk egg whites, egg, cottage cheese, red pepper, salt and nutmeg. Pour this mix over spinach.
Bake for 30 to 40 minutes. After cooking, let the quiche sit for about five minutes and then serve warm.
