Recipe: Maine Blueberry Muffins

Maine Blueberry Muffins

There are a lot of blueberry muffin recipes around in my family, but this one seems to be my favorite.
Yields 12 muffins or 8 large muffins!!

1/2 cup plus 2 Tbs. unsalted butter
1 1/4 cups sugar
3 eggs
1/4 plus 1 Tbs. half and half
1/4 tsp. vanilla
2 1/2 cups flour
1 1/2 tsp baking powder
pinch of salt
1 1/2 cups fresh Maine blueberries

Preheat oven to 425. Grease muffin tins.
In large bowl, cream butter and sugar. Add eggs, half and half and vanilla. Add remaining dry ingredients. Mix well. Batter will be stiff. Fold in blueberries. Distribute evenly among greased tins. Bake for 20-25 minutes till done.
