Recipe: Pumpkin Spice Pancakes

Pumpkin Spice Pancakes

I just might make this for dinner tonight along with some turkey sausage.

2 cups pancake mix
1 and 1/3 cups milk
1/2 cup canned pumpkin
1/4 cup oil
1 tablspoon sugar
1 teaspoon pumpkin pie spice
2 eggs

Heat skillet, grease lightly with oil. combine all ingredients, stir just until all are moistened. Pour 1/4 cup batter onto skillet for each pancake. cook 1 to 1-1/2 minutes, turning when edges look cooked and bubbles begin to break on surface. Continue to cook another minute or until golden brown. Serve with syrup.
