Recipe: Meatball Sandwiches using frozen meatballs (4 recipes)

Crockpot Meatball Hoagies

40 frozen fully cooked meatballs
26-oz. jar pasta sauce
1 onion, chopped
6 slices Muenster cheese
6 hoagie buns, toasted

Combine frozen meatballs, pasta sauce, and onion in 3-4 quart slow cooker. Cover and cook on low heat for 4-6 hours, until onion is tender and meatballs are thoroughly heated. Place meatballs in the toasted hoagie buns and top with cheese. May be placed under broiler to melt and brown cheese. Makes 6 sandwiches.

Philly cheese meatball sandwiches

2 teaspoons vegetable oil
1 green bell pepper, cut into strips
1 small onion, cut into thin wedges
1 18-ounce package frozen, fully cooked meatballs (about 35 meatballs)
6 hoagie rolls, split and warmed
3/4 cup low-fat pasteurized process cheese spread sauce, heated

Heat oil in a large nonstick skillet over medium heat until hot. Add bell pepper and onion. Cook and stir 3 minutes. Add meatballs. Cover and cook 13 to 14 minutes, or until meatballs are heated through and vegetables are tender, stirring occasionally.
Spoon meatball mixture into rolls and drizzle with cheese sauce.
Makes 6 sandwiches.

Meatball Sandwiches

1 batch meatballs (30) -- frozen or thawed
1 cup ketchup
3/4 cup brown sugar -- packed
1/4 cup onion (up to 1/2) -- chopped
1/4 teaspoon garlic powder
1/8 teaspoon liquid smoke, optional
6 sandwich rolls -- split

Place meatballs in an ungreased 1-qt baking dish. Combine the next five ingredients; pour over meatballs.
Cover and bake at 350 F. for 1 hr. Serve on rolls.

Easy Meatball Sandwiches

1 package (16 ounces) frozen beef meatballs
1 medium green or red bell pepper
1 medium onion
1 tablespoon vegetable oil
2-1/2 cups prepared spaghetti sauce with basil
8 French bread rolls (each 6-inches long)
1/2 cup (2 ounces) shredded Mozzarella cheese

Prepare meatballs according to package directions.
Meanwhile cut bell pepper and onion into thin strips. Heat oil in large nonstick skillet over medium heat until hot. Cook vegetables 8 to 10 minutes or until crisp-tender, stirring occasionally. Add meatballs and spaghetti sauce to vegetables. Cook, uncovered, over medium-low heat until heated through.

To serve, cut bread horizontally in half to within 1/2 inch of one side. Remove small amount of soft center from bottom and top of each piece. Place equal number of meatballs and equal amount of sauce mixture on bottom half of each roll. Sprinkle with equal amounts of cheese. Close sandwich.
Makes 8 servings.
