SAUCY BEEF AND ZUCCHINI SKILLET
1 medium onion, sliced
2 tablespoons butter or margarine
4 cups sliced zucchini (1/4-inch thick)
1 pound lean ground beef
1 cup Heinz Tomato Ketchup
1/4 cup grated Parmesan cheese
2 teaspoons lemon juice
1/4 teaspoon dried thyme leaves, crushed
1/4 teaspoon dried oregano leaves, crushed
1/4 teaspoon pepper
1 medium tomato, coarsely chopped
In large skillet, saute onion in butter until onion is tender.
Add zucchini and saute 1 minute; remove and set aside.
In same skillet, brown ground beef; drain excess fat.
Stir in ketchup and next 5 ingredients. Add reserved zucchini and onion; stir in tomato. Simmer, covered, 10 minutes, stirring occasionally.
Makes 4 servings (about 5 1/2 cups)
