CHICKEN FANTASTIC
2 to 2 1/2 pounds broiler-fryer pieces
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons vegetable oil
1 cup chopped onions
1 medium green pepper, cut into 1/2-inch pieces
1 clove garlic, minced
1 1/3 cups Heinz Tomato Ketchup
1 cup water
1/3 cup raisins
Hot cooked rice (for serving)
Dredge chicken in mixture of flour, salt and pepper. In large skillet, brown chicken in oil. Remove chicken; set aside.
In same skillet, saut onions, green pepper and garlic in drippings until vegetables are tender.
Stir any remaining flour mixture into vegetables, then stir in ketchup, water and raisins. Return chicken to skillet. Cover; simmer 35 to 45 minutes or until chicken is tender, basting occasionally. Skim excess fat from sauce.
Serve chicken and sauce with rice.
Makes 4-5 servings (about 3 cups sauce)
