Mini Pizzas (may be frozen)
Newsgroup posting by Jean Clarke
Pizza Dough:
1 1/2 cups warm water (110F)
1 1/2 Tbsp active dry yeast
3/4 tsp salt
1 Tbsp olive oil (you can use corn oil or what ever as well)
4 cups flour
Dissolve yeast in warm water and let stand 5 minutes. Add the rest of ingredients and mix well. I also add dry dill and fresh garlic to the dough.
Knead for 7-8 minutes and place in greased bowl. Let rise for 1 1/2 hours. When ready, shape into mini pizzas (about 4-5-inch round).
Freeze on cookie sheet.
When ready to serve, take out of freezer and place on baking sheet that has been lightly oiled & sprinkled with cornmeal. Let thaw.
Toppings:
can of tomato paste
grated mozzarella cheese
sliced pepperoni, ham, salami, onions, pineapple, mushrooms, whatever.
Sprinkle a little mozzarella on each pizza, spead with tomato paste, add whatever toppings and top with mozzarella.
Bake at 400F for 15-20 minutes.
