Nutmeg Cookie Logs
rec.food.cooking/Lynn Alford
A favorite Christmas cookie in our family (my aunt made them every year, then we moved too far away so I actually asked for the recipe. My husband is now addicted to them, and so is another friend who asked for the recipe after trying a couple. Do not blame me if after you make them once, you are stuck making them for all time.)
1 cup butter
2 tsp vanilla
2 tsp rum flavoring
3/4 cup sugar
1 unbeaten egg
3 cups flour
1 tsp nutmeg
Cream together butter, vanilla, and rum flavor. Gradually add sugar. Blend in egg. Add sifted flour and nutmeg gradually; mix thoroughly. Shape pieces of dough on lightly floured surface into logs of 1/2-inch diameter. Cut in 3-inch lengths. Bake on ungreased sheets 350 F 12-15 minutes.
Frosting
3 Tbsp butter
1/2 tsp vanilla
1 tsp rum flavor
2 1/2 cups confectioners' sugar
2-3 Tbsp cream or milk
Cream together butter, vanilla, and rum. Blend in sugar alternately with cream. Beat well.
Spread frosting on cooled cookies. You can decorate the cookies with colored sprinkles or red hots (cinnamon candy) or other small edible decorations.
