Here is my very favorite Christmas cookie recipe. Enjoy!
1 cup butter of margarine, softened
1 cup sugar
2 tbsp. milk
3/4 tsp. rum flavoring
1/2 tsp. vanilla
dash mace or nutmeg
2 1/2 cups flour
3/4 cup chopped candied cherries (I use about half and half red and green--nice color effect)
1/2 cup chopped nuts
3/4 cup or more flaked coconut
Cream butter and sugar; blend in milk, flavorings, and mace. Stir in flour, cherries, and nuts. Make two 8-inch rolls. Roll in coconut on waxed paper or foil. Chill. Cut into 1/4 inch slices. Bake on ungreased cookie sheet at 375 degrees F, 12-15 minutes or until the edges are brown.
