Paella
4 bone-in chicken pieces of your choice
1 carrot peeled and thinly sliced
1/2 onion, finely chopped
2 tomatoes, chopped
1 small smoked sausage, sliced
1 tsp. turmeric or Saffron (for color)
1 tsp. Oregano
3 cloves garlic, minced
3/4 C chicken broth
1/4 lb. shelled raw shrimp w/ tail on
1/2 cup green peas
Salt & Pepper to taste
Optional: 6-8 small clams in shells
2 cups cooked Saffron rice (I buy it with the seasonings in by Mahatma)
In slow cooker, combine chicken, carrot, onion, tomatoes, sausage, turmeric, oregano, garlic & chicken broth. Cover and cook on Low for 5 hours, or until chicken is tender. Turn to HIGH. Add shrimp, clams & peas. Cover and cook on high for 30 mins, or until shrimp are a bright pink. Season w/ salt & pepper to taste. Serve with some cooking juices over Saffron Rice.
