Pico de Gallo
4 tomatoes, diced
1 onion, diced ( I like red )
1-2 jalepeno peppers, tops removed
1/2 bunch fresh cilantro, washed and dried, stems removed
2 tsp. lime juice
2 tsp. sugar
2 tsp. balsamic vinegar
1 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. ground cumin
Place diced tomatoes and onion in bowl. In an electric chopper, puree jalepeno(es) with cilantro and lime juice. Pour over tomato mixture. Add sugar, vinegar and seasonings. Taste and adjust seasonings. If it is too spicy, add more tomatoes. Serve with corn chips or over broiled chicken or with fajitas!
