Scalloped Potatoes
1 lb.-new red potatoes
2-1/2 cups-jack cheese, shredded and divided
1/2 cups-CARROTS
1/2 cups- PEAS
1/4 cup- BELL PEPPER
1 Tbsp.-butter, melted
2 cups-milk
1/2 cup-white wine
Slice potatoes uniformly. In a casserole dish, layer potatoes, cheese and vegetables. Pour butter, milk and wine over all. Bake at 350F for 30 - 45 minutes. Top with additional shredded cheese. Serve warm.
