Sauteed Just Peas and Cauliflower with Indian Spices
1/4 tsp.-red pepper flakes
1-1/2 tsp.-coriander seeds
1 tsp.-mustard seeds
1/2 tsp.-ground cumin
2 Tbsp.-vegetable oil
3 cups-diced cauliflower florets
1 cup-Just Peas
1-small jalapeno chile, seeds removed and finely diced
1/4 cup-chopped fresh cilantro
3 tsp.-lemon juice
salt and pepper to taste
Heat oil in large saute or fry pan over medium-low heat. When oil is hot, add red pepper, coriander and mustard seeds and cumin; stir until seeds begin to pop. Immediately add cauliflower, Just Peas and jalapeno chile; saute, stirring often to keep from burning, until just tender and cauliflower begins to brown around the edges, about 6-8 minutes. Cauliflower should remain crisp. Stir in cilantro and remove from heat. Drizzle with lemon juice; season with salt and pepper. Serve immediately. Makes 4 1-cup servings.
