Recipe(tried): Palm Beach Chicken, Corny Rice, Greek Spinach, Mixed Berry Parfait

It has been raining off and on with very gusty winds all afternoon. Hurricane Rita is going over the Keys and we can feel the outer bands in Tampa, imagine that!
I called my Aunt Aimee in Palm Beach to find out how she was doing and she shared this recipe for a Flori-beean-style chicken I will be serving it with Corny Rice, Fried Sweet Plantains, Greek Spinach Casserole and a cool, refreshing Berry Parfait.
I want to hurry up and post and finish making dinner so that I will be ready for my TV shows tonight; Boston Legal is on and so is House, another good show. Also, Law & Order SUV, will be premiering tonight opposite Boston Legal, so I will be switching back and forth. House is avery good, it is on the Fox network and it is about a quirky, wacky MD who is training 3 Residents at a hospital. All sorts of medical situations arise and it is very enteraining to say the least.
Here are the recipes for tonight's dinner.

Tia Aimee's Palm Beach Chicken
serves 2
2 boneless, skinless chicken breasts
1 lime
garlic powder
oregano
rosemary
olive oil
salt and pepper
Put the two chicken breasts in an oven-proof glass pan. Drizzle with olive oil. Squeeeze half a lime over the breasts. Sprinkle with salt and pepper, oregano, rosemary, and garlic powder. Do the same to the back of the chicken. Bake 350 for 35 minutes or until chicken is golden brown. Very easy!
Corny Rice
Serves 2-3
1 5 oz. pkg. Vigo Yellow Rice with Saffron
1 11 oz. can Green Giant Mexican corn
2 T. olive oil
1 1/4 c. water mixed with corn liquid from can
Measure water and corn liquid to 1 1/4 c. Put into a small saucepot with lid. Bring to a boil. Add 2 T. olive oil, stir. Add rice and corn. Stir for 1 minute, put lid on and lower heat to simmer for 20 minutes.
Fried Sweet Plantains
I use the frozern box from Goya. Very delicious! Just microwave them!
Greek Spinach Casserole

serves 6
2/3 c. chopped onion
1 T. butter or margerine
2 10 oz. pkgs., frozen chopped spinach, thawed and drained
3 eggs
1 12 oz. container cram-style cottage cheese
2/3 c. crumbled feta cheese
1/2 t. salt
1/2 t. pepper
**I added 2 large crushed garlic cloves
Saute onion and crushed garlic in butter in a skillet til tender. Add spinach and cook 5 minutes, stirring frequently. Combine eggs and rest of ingredients, add to spinach mixture. Pour mixture into a greased 8-inch square baking pan. Bake at 350 for 25-30 minutes or until set. Very yummy!!
Mixed Berry Parfait
1 bag Europe's Best Mixed Berries (Strawberry, Blueberry, Blackberry, Raspberry)
1 8 oz. container Cool Whip
Use a wine glass. Put 2 Tablespoons of berries in bottom, layer with 2 Tablespoons of Cool Whip. Repeat ending with Cool Whip on top. Very refreshing and light and filling!!
