I do a party for 50+ each year and it is all appetizers, served one after another.
You can freeze cookie sheets of wings or ribs or mini egg rolls, or make trays of mini pita pizzas or quesadillas or nachos and just pop them into the oven a couple at a time.
Mini pita sandwiches made with smoked ham and cream cheese and chutney are a good cold appetizer, as is crab salad on cucumber slices.
Have your guests help in serving trays of snacks to people.
Have things like hot crab dip in a hollowed sourdough or pumpernickel, cheese, fruit, pate, veggies and dip on a buffet table.
You can even do little finger food desserts (we call them "dainties" here) like squares or small cookies, tarts or chocolates.
I use a rule of thumb of three hot, three cold and three dip type things.
Always have some vegetarian and no nuts things.
Have plenty of napkins and allow about 6-8 appetizers per person for a meal.
If you don't have enough serving trays, cover disposable aluminum pizza pans or cookie sheets with gold foil paper and doilies.
