Recipe: Pecan Eggplant

Pecan Eggplant
From: Woman's Day Cookbook of Favorite Recipes
Serves: 4

1 medium eggplant (about 1 1/2 lbs.)
1/3 cup butter
1 cup milk
salt and pepper
1/3 cup chopped pecans, Brazil nuts, filberts, or blanched almonds
paprika

Wash eggplant, and without peeling, cut in 1/4-inch slices. Brown lightly on both sides in the butter.

Put in shallow baking dish, cover with milk and sprinkle with salt and pepper, nuts, and paprika.

Bake in slow oven, 300 degrees F., for about 1 hour.
