Recipe: Spinach 'N Mushrooms

Spinach 'N Mushrooms
Yield: 4-6 servings

1 lb. fresh mushrooms, washed and chopped
1 tsp. caraway seeds
1 Tbls. minced parsley
1 slice bread, cubed
2 lbs. fresh spinach
1 small onion, chopped
1 Tbls. bacon drippings
1/2 cup sour cream
salt to taste

Simmer mushrooms in a small amount of water with caraway seeds, parsley, and bread 5 minutes.

Chop spinach and add to mixture. Continue cooking until liquid is almost evaporated.

Fry onion in bacon drippings until translucent. Stir mushroom and spinach mixture into onion mixture; add sour cream (it should be juicy but not too soupy.)
