NO BAKE CHOCOLATE PEANUT BUTTER BITES
2 cups peanut butter
1 lb powdered sugar (1 box)
3/4 cup packed brown sugar
1 stick (1/2 cup) plus 1 tbsp unsalted butter, room temperature, divided
1 (12 oz) pkg. semi-sweet chocolate chips
1 tbsp unsalted butter
Mix together peanut butter, both sugars, and 1/2 cup of the butter. Pat into an ungreased jelly roll pan (about 15x10x2-inch). Flatten with a rolling pin.
Melt chocolate chips and remaining 1 tbsp butter in the top of a double boiler over barely simmering water.
Spread melted chocolate on top of the peanut butter mixture in the pan. Let cool.
Cut into bite sized squares and chill for 15-20 minutes.
Remove from pan and serve chilled.
Makes about 50 bites
