Recipe: Poor Man's Pierogi's

Poor Man's Pierogi's

This is really yummy, taste like those Polish potato thingies.

1 package lasagna noodles
6 or 7 potatoes (enough to make 3 cups mashed potatoes)
1 onion
salt, pepper, butter

Cook lasagna noodles.
Make mashed potatoes however you like them.
Chop and saute onion.

In a baking dish, put one layer of noodles, 1 cup of the potato mixture and 1/3 of the onions. Continue until you have 4 noodle layers, three potato and onion layers.

Cover with foil and bake at 350 for about 20 minutes.

This is simple, cheap and yummy!
