PORK CHOPS AND SWEET POTATOES
3 sweet potatoes, boiled, sliced
4 pork chops
1/2 tsp salt
1 tsp pepper
1/4 cup flour
2 tbsp shortening
SAUCE:
1/2 cup orange juice
1/2 cup currant jelly
2 tbsp butter, melted
1 tbsp lemon juice
1 lemon, grated rind from
1 tsp dry mustard
1 tsp paprika
1/2 tsp ground ginger
Preheat oven to 350.
Salt and pepper the pork chops and dredge in flour.
Melt shortening in a hot skillet and brown chops.
Combine ingredients for sauce.
Arrange potatoes and chops in casserole and cover with 6 tablespoons sauce.
Bake 30 to 40 minutes, basting occasionally.
