Hi Angie,
This is a family favorite and I use often for company.
PORK CHOPS WITH TOMATO OLIVE SAUCE
6 pork chops, cut 1-inch thick (will work just as well with thinner pork chops)
Salad oil
Garlic, 1 clove cut in half ( I like a little more garlic)
Tomatoes peeled and sliced, 4 medium (can use canned sliced tomatoes)
Stuffed olives, sliced, 1/4 cup
Flour, 1 Tablespoon
Salt, 1/2 teaspoon
Pepper, 1/8 teaspoon
Trim off excess fat from pork chops and sprinkle both sides with salt. Heat salad oil in skillet over medium heat. Place chops and garlic in skillet, brown on both sides 10-15 minutes. Meanwhile place sliced tomatoes and olives in bottom of shallow casserole dish. Combine flour, salt, and pepper; sprinkle over tomatoes and olives. Place browned chops on top of tomatoes. Discard garlic; measure 2 Tablespoons of drippings in skillet and pur over choips. Cover and bake in oven @ 375 degrees for 1 hr. Makes 4-6 servings.
