Recipe(tried): Pork Olives with Buttermilk

Here we are...............
POKK OLIVES WITH BUTTERMILK
*****************************
2 lbs pork slices (cut from the leg)
2 Tbls oil
1 tsp ground paprika
1 tsp salt and freshly ground pepper
1/2 cup chicken stock
1/2 cup buttermilk
1 Tbls flour
STUFFING

3 rashers bacon
1 onion diced
1 clove garlic crushed
1 cup cooked spinach(can use frozen)
1 stalk celery finely diced
salt and pepper to taste

make stuffing first and allow to cool

fry bacon gently til crisp.Add spinach,garlic ,onion and celery saute til
soft,leave to cool.With a mallet,beat pork slices until thin and spread
out.season meat.Spon a little stuffing onto each slice.Roll meat up to form a
sausage and secure with toothpicks.Brown olives in a little heated oil and
place add seasonings,buttermilk,and stock.Reduce heat and simmer til meat is
tender.Thicken with flour(Iuse corn flour mixed in a little milk as its lighter
than plain).
How many olives you make depends on size of pork slices

NB:Can use the stuffing mix for big mushrooms or bell peppers
