Recipe: Zucchini Pineapple Tidbits (mock pineapple using pineapple juice)

ZUCCHINI PINEAPPLE TIDBITS

"I have used this recipe and you would swear that you were eating pineapple. It is also very good mixed in with baked beans."

2 large zucchini, peeled and seeds removed
1 (48 oz) can unsweetened pineapple juice
1/2 cup lemon juice
3 cups white granulated sugar
1 (3 oz) pkg pineapple jello

Cut zucchini into chunks to resemble pineapple chunks. Add pineapple juice, lemon juice and sugar; bring to a boil.

Remove from heat and stir in jello powder.

Pack in sterilized jars. Cool, then screw on lids. Store in refrigerator.
