POTLUCK MEATBALLS
2/3 cup soft bread crumbs
1/2 cup grated onion
1 egg, beaten
1 teaspoon salt
1/2 teaspoon ground allspice
1/4 teaspoon pepper
1 pound ground beef
oil
1 tablespoon cornstarch
1 (10-15 oz) can condensed beef consomme, undiluted
Preheat oven to 350 degrees F. Grease a 1 1/2 quart baking dish.
In a bowl, combine bread crumbs, onion, egg, salt, allspice, and pepper; add beef and mix well. Shape into 1 1/4-inch balls.
Heat a small amount of oil in a skillet over medium heat. Brown meatballs; drain. Transfer to the prepared baking dish.
Combine the cornstarch and the consomme until smooth; add to skillet. Bring to a boil, stirring to loosen browned bits from pan. Boil for 2 minutes or until thickened. Pour over the meatballs.
Bake, uncovered, at 350 degrees for 50 to 60 minutes or until meatballs are done.
Makes about 2 1/2 dozen meatballs
