Recipe: Pumpkin Butter

Pumpkin Butter

Makes 6-1/2 pints

1 quart pumpkin puree (fresh of course)
2 to 2 1/2 cups sugar
2 tablespoons orange rind
1/2 cup orange juice
1 teaspoon cinnamon or more to your taste
1/4 teaspoon nutmeg

In large sauce pan combine pumpkin puree and sugar. Bring to boil, stirring.
Mix in orange rind, orange juice and spices Reduce heat.
Simmer uncovered for 30 - 40 minutes until mixture is thickened. It will be thicker when it cools. (it also spatters so stir often)

Ladle pumpkin butter into jars. Store in refrigerator.
