Recipe: Quick, Easy -N- Fast Savory Sirloin Sandwiches

QUICK, EASY -N- FAST SAVORY SIRLOIN SANDWICHES

2 boneless sirloin steak pieces, about 1 inch thick and 1/2 pound total
1 tsp. cumin
1/2 tsp. salt
1/2 tsp. pepper
2 Tbsp. vegetable oil
8 to 12 slices good-quality bread
mayonnaise
4 cups clean, fresh spinach

Cut steak into 2 pieces if necessary. Combine cumin, salt and pepper; rub the spice mixture evenly on both sides of the steak.

Heat vegetable oil over medium-high heat in a skillet until it is hot. Add the steak and cook 5 minutes on each side for rare, or a little longer if desired. Remove the steaks to a plate and let them stand for 5 minutes.

Meanwhile, spread bread with mayonnaise as desired. Cut spinach in slivers if the leaves are large, and divide the leaves among 4 pieces of bread. Slice the steak across the short side on the diagonal to make wide pieces, and divide the slices among the sandwiches.

Cover with remaining bread and cut the sandwiches in half.

Servings: 4 to 6
