QUICK SKILLET LASAGNA
1 pound ground beef
1/2 cup chopped onion
1 clove garlic, minced
1 (16 ounce) can tomatoes
1 (6 ounce) can tomato paste
1 tablespoon parsley flakes
1 1/2 teaspoons oregano leaves
1 teaspoon salt
1 1/2 cups water
2 1/2 cups noodles, uncooked
3/4 cup creamed cottage cheese
1/4 cup grated parmesan cheese
Cook beef, onion, and garlic in a heavy frypan until beef is brown and onion is tender. Drain off excess fat.
Add tomatoes, tomato paste, parsley flakes, oregano, salt, and water. Bring to a boil.
Stir in noodles and simmer until noodles are tender and sauce is thickened, about 25 minutes. Stir only to prevent sticking.
Mix cheeses. Drop by teaspoonfuls onto lasagna mixture. Cover and heat 5 minutes.
Makes 6 servings, about 3 ounces each
