Raisin Bars
1 lb. raisins
3/4 c. sugar
3 Tbsp. cornstarch
3/4 c. walnuts (optional)
1 tsp. lemon juice
pinch of salt
Cover raisins, placed in 1 quart saucepan with water. Mix sugar with cornstarch; add to raisins. Boil until thickened. Add nuts. Cool filling.
1 c. shortening
2 c. brown sugar
1 tsp. soda
2 eggs
1 tsp. vanilla
3 to 3 3/4 c. flour
Cream sugar and shortening. Add soda, eggs and vanilla. Gradually add flour to make stiff dough. Divide dough in half. Grease large jelly roll cookie sheet. Press half of dough on the bottom. Spread raisin mixture on top. Crumble remaining dough over top of filling. Bake for 30 minutes in 350 degrees oven

Crumb Mixture:
3/4 c. soft margarine
1 c. brown sugar
1 3/4 c. flour
1/2 tsp. salt
1/2 tsp. soda
1 1/2 c. rolled oats
Filling: Cook, stirring constantly over low heat until thickened; cool.
Crumb Mixture: Mix butter with sugar. Add dry ingredients, then oats. Press half mixture into greased pan, 13 x 9 x 2-inches. Spread on filling carefully. Pat on remaining crumbs. Bake at 400 degrees for 15 to 20 minutes. Bake until edges are slightly brown.
