Red Roast Pork (Char Siu)
Servings: 4
Char siu is used sparingly in Saimin, Fried rice, Fried noodles, and many other oriental/local style dishes. The "rubbing mixture" also gives flavor to chicken.
1 pound pork -- lean
3 tablespoons ginger -- crushed
1/2 cup green onion -- cut
1/2 cup onion -- sliced
6 garlic cloves -- crushed
1 tablespoon honey
PORK RUB MIXTURE
1/2 teaspoon salt
1/4 cup sugar
1/3 cup soy sauce
2 tablespoons sherry
1 teaspoon chinese 5 spice
2 teaspoons red coloring (liquid)
Rub pork with rubbing mixture. Add ginger, green onion, garlic, and honey. Let stand 1/2 hour.
Roast in 425 degree oven for 15 minutes. Baste and continue cooking at 375 degrees for 30 minutes. Remove and use as needed. Source unknown.
