Recipe(tried): Rice Custard Pudding

Hi Barbara, If you like a custard-like rice pudding, this recipe is wonderful. - Betsy

Rice Custard Pudding

Preheat oven - 325 degrees F

Combine:
4 eggs, beaten
1 cup sugar (I use 1/2 cup)
1/8 teaspoon salt
4 cups milk, scalded
1 teaspoon vanilla

Stir in:
1 cup raisins (I use 1/2 cup)
2 cups cooked rice

Pour into a 2 quart baking dish. Set dish in pan of hot water (about 1-inch deep).

Bake at 325 degrees F for about 1 hour or until done (set in center). I believe you could bake this for a shorter time at 350 degrees F - probably about 45 minutes.
