Recipe: Roasted Garlic Pasta Primavera with Garlic Sauce (using artichokes, olives, mushrooms and spinach)

ROASTED GARLIC PASTA PRIMAVERA

1 tablespoon olive oil
1 to 1 1/2 whole heads garlic (roasted 15-20 minutes at 350 degrees F)
1 cup sliced mushrooms
1 cup sliced tomatoes
1/2 cup sliced black olives
1/2 cup chopped artichoke hearts
1/2 cup Garlic Sauce (recipe follows)
3 cups cooked pasta (any variety)
2 cups fresh baby spinach
1/2 cup grated Parmesan cheese
Salt and pepper, to taste

Saute roasted garlic in olive oil. Add mushrooms, tomatoes, olives and artichoke hearts.

Add Garlic Sauce, pasta, spinach and cheese. Add more sauce, if desired, and salt and pepper to taste. Combine ingredients and serve immediately.

GARLIC SAUCE

2 chopped shallots
3 minced cloves of garlic
1 Tbs. olive oil
1 cup white wine
1 1/2 cups heavy cream

Saute shallots and garlic in olive oil. Add wine. Bring to boil and reduce by half. Add cream and simmer until reduced by 1/2.
