Roasted Onions

3/4 cups of water
1/2 cup Balsamic or red wine vinegar
2 tsp firmly packed brown sugar
1/4 tsp salt
dash pepper
4 medium or large onions

Blend water, vinegar and sugar; add the salt and pepper. Pour mixture into a Pam sprayed baking pan. Cut onions LENGTHWISE in 1/2. Place cut side down in vinegar mixture. Bake uncovered, in the lower third of a 400 degree oven until onions give readily when gently squeezed, most liquid has evaporated and cut sides of onions are glazed, about 1 1/4 hours. Arrange cut side up on a platter.
