Recipe: Hagley Potato Casserole

Hagley Potato Casserole
This is a family favorite from my mother's years as a guide at Hagley Museum

2 lb Ore Ida hash browns, thawed
2 cups sour cream
1 can cream of chicken soup
2 cups grated cheddar cheese
1/2 chopped onion
4 slices bread torn into crumbs tossed with 3 Tbsp melted butter

Mix all ingredients in large bowl, except for bread crumbs. Put in buttered casserole. Top with crumbs. Bake at 325 for 1 hour, uncovered. (Can make half or make ahead, but allow extra baking time if previously refrigerated).
